Baked Citrus Salmon
This simple baked citrus salmon comes together in about 30 minutes from start to finish, using a combination of lemons, blood oranges, and common oranges for a colorful, light, and low-carb supper! And, yeah, it appears to be elegant enough to wow just about anyone.
I enjoy salmon, whether grilled or pan-seared. It’s versatile, nutritious, and meaty enough to stand up to terrific dishes without being delicate or mild.
This baked citrus salmon recipe, on the other hand, is about as simple as it gets, with no marinade, no fancy equipment (just a baking sheet), and the citrus you have lying around that needs to be used up, making it the ideal beginner salmon recipe when you want to learn just how to cook salmon in the oven.
Or when you want to wow your guests without making a huge mess in the kitchen.

What you’ll need:
This oven-baked fish dish doesn’t require many ingredients. You just need 1 full side of salmon, 2 to 4 lbs, or 4 to 6 individual salmon fillets, Girl Carnivore Over Easy everything blend (or any zesty fresh herbaceous spice blend, but I couldn’t resist), and a variety of citrus to slice over top.
For the WOW factor, I prefer to use three different hues of fruit in this dish: lemons, blood oranges, and common oranges; but, if you just have lemons or oranges, this recipe is still delicious. Tangerines, naval oranges, Cara Cara oranges, and Valencia oranges also work well in this recipe.

How to Make Oven Baked Citrus Salmon
This dish is SO simple, but it looks like a 5-star meal! All you have to do is divide your salmon fillet into equal halves.
To produce even sections, cut the edges from each side, from the head edge to the tail fin edge, making a smooth even line. Starting at the broadest point, cut even sections based on weight rather than breadth. The further back you go, the thinner the meat becomes, and equivalent weight aids in even cooking time.
The lemons and oranges are then sliced and placed on a well-used baking pan. Place the salmon pieces, skin side down, on the citrus bed.
Sprinkle with the salt and spice mixture before stacking on more fresh slices. Then, bake the salmon in a preheated oven for 15 to 18 minutes, or until it reaches 145°F and flakes easily with a fork.
That’s all. Then you serve it with whatever appeals to you and suits your nutritional objectives or demands.
It doesn’t get much easier than this. Sure, you could omit the fruit… but at the very least, it helps this recipe stand out!
Garnish the fish with freshly minced parsley and thinly sliced peppers when done to provide another layer of bright tastes and texture.
What should you serve with baked citrus salmon?
This meal goes nicely with a number of sides. Roasted asparagus, blanched green beans, a robust salad, quinoa, or tabouli are all good options. While keeping the dinner simple, the fresh herbs pick up on and complement the bright citrus tastes of the fish.
Refrigerate leftovers in an airtight container for up to 3 days, removing the lemons that the salmon stood over during baking. For a repeat supper, serve leftovers cold over a salad, sprinkled into your morning eggs, or over a bagel, or reheat in the microwave in short bursts until heated through.
Easy Baked Citrus Salmon
This salmon dish is one of my favorites; with lemon and orange slices, it’s bright and light, but it’s also extremely simple to make with a fast oven bake. A spectacular 30-minute dinner!

Prep the Salmon
- Preheat the oven to 350°F.
- Line a baking sheet with foil or, grease with oil, rubbing all over to prevent sticking.
- Trim and cut the salmon into about 6 even portions.
- Slice the citrus into ¼″ slices and remove any seeds.
- Arrange half of the citrus slices on the baking sheet.
- Nestle the salmon, skin side down over the fruit slices.
- Sprinkle with salt and the Girl Carnivore Over Easy blend.
- Top with one or two additional slices of citrus on each fillet.
Bake the Salmon
- Place the baking sheet with the salmon on it in a preheated oven for 15 to 20 minutes, or until the fish reaches 145°F at its thickest section and flakes readily with a fork.
- Remove the salmon from the oven and set it aside for 3 minutes to rest before serving.
- Garnish with fresh sweet pepper slices, parsley, crushed black pepper, and finely shaved scallions.
Spread 1 to 2 tbsp mayo over the salmon before seasoning for an extra layer of flavor. If you’re not tracking carbohydrates, you can also add panko or breadcrumbs.
